Rosemary Asiago Focaccia


Ingredients

  • For the starter:
  • 1/2 cup cool water
  • 1/16 tsp instant yeast
  • 1 cup all-purpose flour
  • For the dough:
  • 2 tsp instant yeast
  • 1/2 (+/- 1 tbsp in summer or winter, respectively) cup lukewarm water (around 110 degrees F)
  • All of the starter (above)
  • 2 cups all-purpose flour
  • 1 1/4 tsp salt
  • 2 tbsp nonfat dry milk
  • 2 tbsp extra virgin olive oil
  • For the topping:
  • 2 tbsp extra virgin olive oil
  • 2 tbsp chopped fresh rosemary
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp Kosher salt
  • 1/2 cup Asiago cheese, coarsely shredded
