Spinach Strawberry Quinoa Salad with Feta and Walnuts {}


  • 4-5 generous handfuls of baby spinach (or 1 bag of DOLE Arugula), washed and very thoroughly dried
  • 1 pint strawberries, washed, hulled, and quartered
  • 2 cups cooked quinoa
  • ½ cup crumbled feta cheese
  • ½ cup toasted walnuts
  • 3-4 tablespoons olive oil
  • juice from gentle squeeze of half a lemon (depending on how sweet strawberries are!)
  • kosher salt and pepper to tast
