Slow Cooker Vegetarian Taco Soup


Ingredients

  • 1-2 tablespoon olive or coconut oil
  • 1 small onion (diced)
  • 1 jalapeno (seeds & ribs removed, diced)
  • 1 clove garlic (finely minced-I used my garlic press)
  • 2 cups or 1 can black beans (drained & rinsed if canned)
  • 2 cups or 1 can pinto beans (drained & rinsed if canned)
  • 2 cups or 1 can kidney beans (drained & rinsed if canned)
  • 1 28-ounce can fire-roasted tomatoes
  • 2 cups vegetable broth (you could also use chicken broth if you are not concerned about it being completely vegetarian)
  • 1 tablespoon chili powder
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried dill
  • 1/4 teaspoon cumin
  • 1/4 cup chopped parsley
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon salt (plus more to taste)
  • 3 ears corn (cleaned, kernels cut off of ears)
  • grated cheddar or monterey jack cheese, sour cream, and chopped cilantro (if desired)
