Twice-Baked Potatoes (and a Perfect Basic Baked Potato)


Ingredients

  • 1 baking potato (whatever size you like-as many potatoes as you want.)
  • 1 teaspoon oil (I like coconut oil)
  • 1/2 teaspoon sea salt or kosher salt (optional)
  • 2 large baked potatoes
  • 1/3 cup sour cream
  • 1/2 cup grated cheddar cheese
  • 2 tablespoons chives or chopped green onions (or a combination of the two)
  • 3 strips bacon (cooked and crumbled)
  • 1 tablespoon unsalted butter (optional)
  • salt and pepper (to taste)
