Stuffed Cider-Brined Pork Chops With Canadian Cheddar


Ingredients

  • 5 tsp (24 mL) Dijon mustard
  • 1 tbsp (15 mL) chopped fresh sage
  • 3 cloves garlic, finely grated or pressed
  • 1/4 tsp (1 mL) pepper
  • 120 g extra-old Canadian Cheddar cheese, cut in 1/4-inch (5 mm) thick slices
  • 1 tbsp (15 mL) olive oil
  • 2 tbsp (30 mL) olive oil
  • 1 large Golden Delicious apple, sliced crosswise in 3/4-inch (2 cm) thick rounds
  • 1 onions, sliced crosswise in scant 1/2-inch (1 cm) thick rounds
