  • 3 1/4 cups flour (plus more for dusting)

  • 1 cup ricotta cheese
  • 3/4 cups goat cheese
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped mint
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
