Chinese Salt and Pepper Tofu Restaurant Style


Ingredients

  • for the sauté
  • 1/2 tablespoon oil
  • 2 medium leeks, white part only, washed and grit removed (1 cup when chopped)
  • 1 celery rib (1/2 cup when chopped)
  • 1 small green pepper (1/2 cup when chopped)
  • 1 tablespoon finely minced garlic
  • 1 tablespoon finely minced ginger
  • 1 tablespoon light soy sauce
  • 1/2 teaspoon brown sugar
  • for the tofu
  • 1 block (14 oz when drained) extra firm tofu
  • 4 tablespoons corn starch
  • 1/2 teaspoon or to taste freshly cracked black pepper
  • Salt
