Indian-Spiced Stuffed Eggplant


Ingredients

  • ½ cup brown rice, preferably brown basmati
  • 1 ¼ cup water
  • 2 medium eggplant (about 1 pound each)
  • 4 Tbsp extra-virgin olive oil, divided
  • 2 cup finely chopped onion
  • 1 ½ tsp kosher salt, divided
  • 2 Tbsp minced garlic
  • 1 Tbsp minced fresh ginger
  • 12 oz ground bison
  • 1 Tbsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp garam masala (see Note)
  • 1 tsp cayenne pepper
  • 2 Tbsp tomato paste
  • freshly ground pepper to taste
