GNOCCHI W/ SAUSAGE, FENNEL & TOMATO


Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 1/2 c. fennel chopped
  • 2 shallots, finely diced
  • 1/2 lb. Italian Sausage (sweet or hot), removed from it’s casing
  • 3 plum tomatoes, diced
  • 2 tsps. fennel seeds
  • 2 cloves of garlic, kept whole
  • 1/2 tsp. red pepper seeds, (optional)
  • 2 tsp. tomato paste
  • 1 Tbsp. chopped parsley
  • Salt & pepper to taste
