quinoa and black bean enchiladas


Ingredients

  • 1 Tbsp oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup diced green chilis
  • 3 cups chopped kale
  • 1/2 tsp ground cumin
  • 1/4 tsp salt
  • 1 1/2 cups cooked black beans
  • 1 1/2 cups cooked quinoa
  • 10 6-inch tortillas
  • 1/2 cup chopped cilantro
  • enchilada sauce
  • cheese!

Directions

  1. cook quinoa
  2. preheat oven to 350
  3. in large pot, heat oil. saute onion and garlic 5 to 8 minutes until onion in translucent. add chilies and stir. add kale and allow it to wilt slightly, about 2 minutes. add cumin, salt, black beans, and quinoa, and continue cooking 4 to 5 minutes, stirring so everything is well mixed.
  4. in the bottom of a casserole dish, spread a thin layer of enchilada sauce. place about 1/4 cup quinoa mixture in center of a tortilla. add cheese! roll tortilla up and place in the dish. repeat with remaining tortillas. cover tortillas with a layer of enchilada sauce and bake for 25 minutes. serve topped with cilantro. and cheese!
