Prosciutto, Gruyère, and Peach Croissant Sandwiches


Ingredients

  • 1 Tablespoon grainy mustard
  • 1-1/2 teaspoons balsamic vinegar
  • 1 Tablespoon olive oil
  • Salt and freshly ground pepper
  • 6 mini-croissants, prepared according to package instructions (see notes)
  • 6 slices Gruyère
  • 3 slices prosciutto, cut in half lengthwise
  • 1 ripe peach, sliced into thin wedges
