Goat Cheese & Fig Salad


Ingredients

  • For 2 servings:
  • lettuce, e.g. rocket salad
  • 1 fig
  • ca. 75g goat cheese
  • 4 slices prosciutto ham
  • walnuts (optional)
  • Dressing
  • 2 tbsp olive oil
  • 1 tsp cider vinegar
  • 1 tsp honey
  • 1/2 tsp mustard
  • salt & pepper

Directions

  1. Step 1
  2. Place the prosciutto on a grill rack and slowly grill in the oven until crispy.
  3. Step 2
  4. Add the ingredients for the dressing, except salt & pepper, to a jar, close the lid and shake well. Season to taste with salt & pepper.
  5. Step 3
  6. Cut both, fig and goat cheese, into small pieces. Mix the lettuce with the dressing and arrange on two plates. Serve with figs, ham and goat cheese. If you use walnuts too, roast them gently before serving.
